This recipe is super easy as all the spices added are just 1 teaspoon each. This fajita recipe is smoky and flavourful and a great option for a quick weekday meal which the whole family can enjoy.
Ingredients
2 chicken breasts - cut into 1inch strips
1 red bell pepper- sliced
1 white onion- sliced
handful of chopped fresh coriander
1tsp salt
1tsp course black pepper
1tsp smoked paprika
1tsp garlic powder
1tsp onion powder
1tsp smoked chipotle paste
1tsp crushed coriander seeds
1tbs cornflour
1tbs olive oil
Method
Firstly cut your chicken up into strips as specified in the ingredients, thereafter add all the spices, chipotle paste and cornflour to the chicken and mix well. Whilst the chicken is marinating start slicing your pepper, onion and finely chop the fresh coriander.
Now take a large non stick frying pan, add 1tbs of olive oil and place on a high heat. Once the oil has heated add the chicken to the pan and spread out to ensure all the strips are touching the bottom of the pan. Let this cook for approx. 3 mins to ensure some browning and caramelisation. Turn over after 3 mins and cook for a further 3 mins. Now start mixing the chicken whilst adding the peppers and onions, keep tossing on a high heat for 3-4 mins or until the chicken is cooked. Garnish with fresh coriander and serve with your choice of accompaniments
