Banana French Toast

This recipe is great for using up over ripe bananas and creates a really delicious sugar free French toast. I used a thick sliced tiger bloomer which creates a more fluffy texture, however feel free to use any bread of your choice. If you do use smaller or thinner slices of bread then you may find the recipe stretches further.



Ingredients


2 ripe bananas

1/2 cup of oat milk or any milk of your choice

1 egg

1/4 tsp vanilla extract

1/2 tsp cinnamon powder

sunflower oil

4 thick slices of tiger bloomer


Serving suggestion


Fresh berries, coconut yoghurt and honey.



Method


Mash the bananas up really well using a fork, thereafter add the egg, milk, cinnamon and vanilla. Mix well until the mixture is fully incorporated. Now place a non stick frying pan on a medium heat with a little sunflower oil (about 1tsp), once the pan is heated take a slice of bread and coat well in the banana eggy mixture and add to the pan. Cook on both sides until golden brown. Be mindful that the pan will start to become smoky after a couple of slices have been cooked, I would therefore suggest waiting for the pan to cool down before giving it a wipe with kitchen paper before starting the next batch.


Serve with fresh berries, coconut yoghurt and a drizzle of honey.
